Xanthan gum is a natural gum made when the bacterium Xanthomonas campestris ferments a sugar, usually from corn, soy or wheat. It is the same thickener used in salad dressings.
A small amount turns water into a smooth gel, keeps ingredients evenly suspended, and gives serums their slip. It is one of the gentlest thickeners there is.
